Jason Park

Jason Park is the owner and top chef of Maru, a world-class French/Japanese/Sushi restaurant where the flavors, textures and creativity of modern California cuisine flow deeply! Jason is a traditionalist and uses only the freshest and highest quality ingredients. Fresh fish is flown overnight from Japan, and Jason personally handpicks produce from the Santa Monica Farmers' Market every week.
Jason loves cooking pan-roasted fish that gets a crispy skin. He was taught to make a balanced plate when it comes to entrees, so he makes sure that there is a good starch and a good vegetable to complement each meal. Also, he feels sauces are very important. It can be light as a broth, he says, or flavorful, like a reduction that has simmered on the stove for 48 hours. “If the sauce is made properly, it can tie all the other elements of the plate together,” says Jason, “that’s what takes it over the top!!” I’m sooo with you Jason – love the sauce!!
While growing up, Jason avidly watched cooking shows like “Great Chefs of the World” and “Yan Can Cook.” It was from these early beginnings, that a life-long love of fine cuisine was born. He is really proud to share Maru with everyone. And not only is the menu impressive, the wine list is extensive and diverse, featuring selections from both well-known and newly discovered wineries in California and France. Pair a wine with his delicious dishes for culinary perfection!
Your favorite place in LA to have a cocktail?
Varnish – they take their time to do things right. They make all their flavorings there and fresh-squeeze the juices. They take pride in their work.
Your favorite LA place for bargain shopping?
I just wait until Bloomies has a big sale but I also frequent REI. I tend to do a lot of online shopping.
You could change one thing about LA - what would it be?
I wish there was a way I could always surround myself with real and honest people.

Your favorite LA extravagance?
Fine dining: My tabs are usually $300+ just for myself but the memories are unforgettable. Sona has been my best dining experience so far. It is on par with the French Laundry and Daniel with Cyrus being my favorite. My favorite restaurant in LA is Hatfield’s.
Your favorite neighborhood haunt?
Taco trucks: Rambo's and Mexicali
Your favorite local getaway?
When I need to get away, I like to go surf at Topanga and then go for a hike off the many trails from Sunset to access the Santa Monica Mountains. It depends on my mood what kind of a hike I do
Your favorite place for cheap eats?
El Parian, Vincenzo’s on Lyons in Valencia, El Taurino, Vito’s
You always take out of town guests to this spot?

You're most connected to this charity or your last volunteer experience?
Child and Family Center in Valencia. I have been working with them for the past 4 years or so. I like working with Wally's Wine for their UCLA Jonsson Cancer Center.
